
Serving up pancakes, eggs and other classic breakfast and brunch fare, the popular Flip Cafe has been a go-to downtown Edinboro eatery since 2011, and for good reason: It’s flippin’ good. Since cook Jessica Sheehan took over as owner in 2022, Flip Cafe has been voted Best Breakfast, Best Brunch or Best Dinor every year by Erie Reader.
The extensive menu showcases ingredients from local producers, like coffee roasted locally by Happy Mug, and local milk, eggs and much of the produce. Rotating monthly specials make for some fun and interesting choices, said Sheehan, whose clear passion for food created cult classics like Peaches & Cream French Toast or omelets made with beet falafel — specials that only show up one month out of the year when the ingredients are in season.
The pancakes are, of course, super popular — they’re the size of a dinner plate, they’re made from scratch daily and they range from tried-and-trues like buttermilk to gluten-free buckwheat to creampuff and banana walnut brown sugar, while the French toast varieties include bacon, cannoli, cinnamon raisin and more.
Another popular dish is the chorizo smash, made by mixing hashbrowns, scrambled eggs and a variety of toppings together before topping them with melted cheese. The menu also includes paninis, burgers, burritos, wraps and salads, as well as homemade soups. Top off your meal with cinnamon flips, which are perfect little donut clouds rolled in cinnamon sugar.
Summer is the busiest time of the year, what with all the different events, camps and festivals happening in Edinboro — basically, everything you expect to love from a college community. If you walk into town for breakfast and you need to wait until your table is ready, Flip’s across the street neighbor, The Edinboro Hotel Bar, offers mimosas and bloody Marys you can enjoy there while you wait for your table.
It’s this kind of community collaboration that keeps Flip Cafe going strong. “Our regulars are the best, and they show up on a weekly or even daily basis to enjoy a nice meal and show their support,” Sheehan said. “We are fully integrated in the beautiful ecosystem of Edinboro, and we do our best to provide food and service that represents how great our community is.” Stop in the next time you’re on vacation; your palate will thank you.
Flip Cafe is open 5 days a week: Mondays from 7 a.m. to 2 p.m., as well as Thursdays through Sundays from 7 a.m. to 2 p.m. It is closed Tuesdays and Wednesdays. It is fully wheelchair accessible, and catering is also available.
